During this time, 10-50% of the less stable nutrients have disappeared. Frozen veggies are actually great options, as they're usually picked when ripe then processed soon after, sealing in most of the original nutrients. Canned veggies are also processed soon after harvesting, but may be high in sodium. When you have the choice, aim for fresh vegetables from a farmer's market, followed by fresh or frozen veggies at the store depending on how soon you'll eat em.
